Menu Monday - 3/31/14

I have to admit, I did not stick to the menu last week.  I was sick most of the week and just didn't feel motivated to cook.  I did have the Spinach, Mushroom and Cheese Quesadillas and they were SO good.  That led me on an almost week long eating spree of quesadillas because they are yummy and easy.  I had black bean and cheese, plain cheese, cheese and mushroom.  They were all easy on the belly and Jaxon would eat them too.

Well, on to this week's menu.

A salad of honeydew melon, feta cheese, blackberries and greens.

the issue of taste

Grilled avocado tacos.

Grilled Avocado tacos, an absolute must this summer! They may not look like much, but trust me before you know it you'll be shoveling your 5th taco in your mouth ohsweetbasil.com_-2

Poppyseed Chicken with Rice and green beans.

Sliced deli ham with scalloped potatoes. (by Ree Drummond via Women's Day)  Served with carrots and leftover green beans.

Cream of mushroom soup (Amy's organic) with a side salad and garlic bread.

  2. Erica, I do too! I couldn't find a honeydew so I'm gonna substitute cantaloupe.

  4. One of the finest of write-ups there is on the internet today. Kudos to the author for being so well informed. I must give it to their presence of mind and the selection of words. This couldn’t have been written in a much beautiful way. Keep it up. Good on you.
