Menu Monday - 3/31/14

I have to admit, I did not stick to the menu last week.  I was sick most of the week and just didn't feel motivated to cook.  I did have the Spinach, Mushroom and Cheese Quesadillas and they were SO good.  That led me on an almost week long eating spree of quesadillas because they are yummy and easy.  I had black bean and cheese, plain cheese, cheese and mushroom.  They were all easy on the belly and Jaxon would eat them too.

Well, on to this week's menu.



A salad of honeydew melon, feta cheese, blackberries and greens.

Grilled avocado tacos.

Sliced deli ham with scalloped potatoes. (by Ree Drummond via Women's Day)  Served with carrots and leftover green beans.



Cream of mushroom soup (Amy's organic) with a side salad and garlic bread.

Mini Apple Pies

I had three Granny Smith apples that were starting to turn brown so I needed to use them up.  I found this recipe via Pinterest.  I used this pie crust recipe.  It calls for 1 cup of butter, yes you read that right, lol.  I only had 1/2 a cup of butter (how did that happen?) so I substituted 1/2 a cup of cold coconut oil and it worked just fine.  I have to tell you this crust and pie was SO good.  I'm not a huge sweets eater, but I have to confess I ate two.  I really didn't want to share, but if I kept them I knew I would eat them all.  So, I took three to my parents for them and one nephew and kept the last one for a work snack.


The pies are made in a  regular size muffin tin.  They really are the perfect size.  Too bad I didn't have any ice cream or whipped topping.  I still have 1/2 the crust and some extra apple mixture in the fridge so there may be a few more of these babies in my future.

Menu Plan Monday - 3/24/14




Hi!  Long time, no see.

Here is what I am planning on serving this week.

Monday:
Spinach, mushroom and cheese quesadillas for a meatless Monday.  Jaxon will just have cheese on his with a side of steamed broccoli.  I found my inspiration here.

Tuesday:
Chicken pot pie.  Here are several versions.  Served with rice for Jaxon.

Wednesday:
Balsamic roast beef, like this one.  Only, I don't usually cook in a slow cooker, I find it makes meats mushy so I usually bake my roast.  Served with sweet potatoes and green beans.

Thursday:
Tomato soup, like this one.  Served with a grilled cheese sandwich.

Friday:
Hamburger with sweet potato fries.

For lunches this week, I pre-made 4 salads and am thinking of making this yummy avocado and bacon pasta salad.
