Menu Plan Monday - 3/24/14

Hi!  Long time, no see.

Here is what I am planning on serving this week.

Monday:
Spinach, mushroom and cheese quesadillas for a meatless Monday.  Jaxon will just have cheese on his with a side of steamed broccoli.  I found my inspiration here.

Tuesday:
Chicken pot pie.  Here are several versions.  Served with rice for Jaxon.

Wednesday:
Balsamic roast beef, like this one.  Only, I don't usually cook in a slow cooker, I find it makes meats mushy so I usually bake my roast.  Served with sweet potatoes and green beans.

Thursday:
Tomato soup, like this one.  Served with a grilled cheese sandwich.

Friday:
Hamburger with sweet potato fries.

For lunches this week, I pre-made 4 salads and am thinking of making this yummy avocado and bacon pasta salad.

Thanks for stopping by,
Natosha

{Easy BBQ Meatloaf}

I have more elaborate recipes for meatloaf, but this Easy BBQ Meatloaf recipe is great for those days you don't have a game-plan.  You should already have most of the ingredients on-hand.  If not, they are inexpensive and quick to find.

Ingredients
1 lb ground beef
1 cup BBQ sauce (your choice of flavor)
1 cup bread crumbs
2 tbs dried minced onion
1 tbs garlic powder
1 egg (slightly beaten)

Instructions
Preheat your oven to 375 degrees F.

Get your ground beef out of the fridge and let it warm up a bit.  (Don't worry, you aren't leaving it out for hours, you just don't want it to be super cold.  It's easier to mix when it's warmer.)

Meanwhile,  in a large bowl, mix BBQ sauce, bread crumbs, onion, garlic and egg until combined.  Add the ground beef.  Mix well.  I use my hands because it just gets everything incorporated better.

I usually just shape the meat into a loaf and bake on a jellyroll pan or cookie sheet that I have covered in foil.  However, you can also use a loaf pan.  Cook for 45-50 minutes, or until done.  Spread a little extra BBQ sauce on top and let sit for 5 minutes.

I have also made 4-6 mini meatloaves, reducing the cooking time to 20-25 minutes.

I like to serve with mashed potatoes and a green veggie.

Enjoy and thanks for stopping by!

Salisbury Steak

Last night I made Ree Drummond's (The Pioneer Woman) Salisbury Steak recipe (for the 4th time!).  My hubby and I love it and it is so easy.  Of course I didn't take pictures.  0_0

I usually make mashed potatoes to eat with the yummy gravy, but last night I decided to bake a couple of yams.  I added some butter and sprinkled a little brown sugar on the top.  I also served green beans.  Oh, and I added some mushrooms in with the onions.  Yummy!

I followed Ree's recipe to a T last night.  The first three times I made it I did not have the browning sauce.

Let me tell you, that stuff doesn't taste like much right out of the bottle, but it truly gave the gravy a depth of flavor and a color that was missing before.  Also, the last couple of times I used a little too much Worchestershire sauce and it tasted kinda off, so be careful. (unless you love, love, love the flavor)

If you try the recipe, let me know how you liked it.

Thanks for stopping by and have a great weekend!

Quick and Easy Stuffed Bell Peppers

Last night, we went meatless and taco "ish."  I was looking for something quick and easy because I was feeling lazy, but I was hungry.  So I decided to make stuffed bell peppers with a Mexican flavor.

I started with some cute little bell peppers my sister gave me from her garden, home-made salsa, 1/2 a small onion (chopped), tops of the peppers (chopped) and some rice and black beans I had already prepared and froze.

I mixed everything together, stuffed the peppers and then topped with Monterrey Jack cheese.  I thought we would eat two each and have leftovers, nope.  We each had 3 1/2!  They were very light and yummy.

Ingredients:

1 cup salsa
1/2 cup chopped onions
1/4 cup chopped bell pepper
7 small green bell peppers
1 1/2 cups cooked rice (est.)
1 cup black beans  (est.)
Monterrey Jack cheese

Here's the rundown:

Bring large pan of water to boil, add bell peppers and boil for 3 minutes.  Preheat oven to 350 degrees. Remove bell peppers and set aside.  Saute chopped onions and peppers in oil of your choice until onions are transparent and peppers are soft.  Mix with salsa, rice and black beans.  My rice and beans were pre-
seasoned with garlic, salt and pepper.  So put whatever spices you like, taste and re-season if necessary.
I lined a casserole dish with aluminum foil for easier clean-up.  Place bell peppers in dish or on baking sheet and stuff with rice mixture.  Cover with foil and bake for 30 minutes.  Remove from oven, place cheese on top and return to oven until cheese is melted.

I used really small bell peppers.  If you are using full-sized ones, you will need to add about 15 more minutes to the cooking time so they will be nice and toasty.

Do you make stuffed peppers?  What's your favorite way to prepare them?  If you try this recipe, let me know how they turned out.
